Thai-fried Noodles with Prawns

Ingredients

  • 500g (1 lb) large or medium-sized raw prawns, shelled and deveined
  • 300g dried sen lek noodles
  • 4 tablespoons tamarind purée or lemon juice
  • 2½ tablespoons fish sauce
  • 3 tablespoons tomato ketchup
  • 3 tablespoons sunflower oil
  • 5 garlic cloves, finely chopped
  • 4 eggs
  • 2 carrots, shredded
  • ½ teaspoon chilli powder (or to taste)
  • 2 tablespoons ground dried shrimp
  • 2 tablespoons preserved turnip, finely chopped (optional)
  • 5-6 tablespoons chopped roasted peanuts
  • 375g (12oz) bean sprouts
  • 4 spring onions, finely sliced

To Serve

  • 1 long red chilli, deseeded and shredded
  • Coriander leaves
  • Lemon Wedges

Method

  • Prepare the prawns. Soak the noodles in water for 4-5 hours or overnight if time allows. Drain them.
  • Combine the tamarind purée or lemon juice, fish sauce and tomato ketchup in a bowl and set aside.
  • Heat 1½ tablespoons of oil in a non-stick wok or frying pan and stir-fry the garlic over medium heat until it is lightly browned.
  • Add the prawns and cook for 1-2 minutes, then move the prawns from the middle of the wok. Add the remaining oil to the wok. Add the eggs and stir to scramble for 1-2 minutes. Add the noodles and carrots and stir-fry together for another 2 minutes. Add the tamarind purée or lemon juice mixture, chilli powder, dried shrimp, preserved turnip (if used) and half the roasted peanuts. Add half the bean sprouts and all the spring onions.
  • Spoon on to a serving plate and sprinkle over the remaining peanuts.
  • Garnish with chillies and coriander leaves, arrange the lemon wedges and remaining bean sprouts at the side of the dish and serve immediately.

Healthy Tip

Sen lek noodles are narrow, 5mm (¼ inch) wide rice noodles, and are considered to be healthier than pasta, which is made from eggs and flour.
