Californian Cobb Salad

Alphabet A Americans love their salads, and this one is a classic, often served in neat lines of different ingredients, but, to be honest, if you want to toss it all together, please feel free to do so, writes Antony Worrall Thompson

Serves 4

Ingredients

  • ½ head of iceberg lettuce
  • ½ head of romaine or cos lettuce
  • ½ bunch of watercress
  • 1 small head of chicory, leaves separated
  • 4 medium tomatoes, peeled, deseeded and diced
  • 2 cooked chicken breasts, diced
  • 6 strips crisp cooked bacon, crumbled
  • 1 avocado, diced
  • 3 eggs, hard-boiled and chopped
  • 2 tablespoons chopped fresh chives
  • 50g Roquefort blue cheese, crumbled into pieces
  • Toast or cornbread, to serve
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar or granulated low-calorie sweetener
  • 1 teaspoon lemon juice
  • ½ teaspoon ground black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon English mustard
  • 3 garlic cloves, chopped
  • 3 tablespoons olive oil

Method

  • First make the dressing by putting all the dressing ingredients in a clean jam jar, sealing and shaking to emulsify. Chill until required and shake before serving.
  • Shred the lettuces and in a salad bowl combine them with the watercress and chicory.
  • Scatter the tomatoes over the top, together with the chicken and bacon, then decorate with pieces of avocado and sprinkle over the chopped eggs, chives and Roquefort.
  • Just before serving pour over some dressing and mix thoroughly.

Delicious served with toast or cornbread.

Tip Depending on the degree of oiliness desired, you can add a little water to the dressing.
