Chicory
Serves 4
Ingredients
- 2 rashers back bacon
- 2–3 handfuls lamb’s lettuce
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 200 g (7 oz) ripe Brie
- Salt, black pepper
- 2 small red dessert apples
- 1–2 heads chicory
Method
- Grill bacon and crumble. Combine oil, vinegar and seasoning.
- Arrange chicory leaves, lettuce and small slices of Brie on 4 serving plates. Core and thinly slice apples and add to plates.
- Spoon dressing over and scatter bacon on top.
