Christmas cabbage

Serves 8

  • 1 large red cabbage, cut into wedges
  • 2 red onions
  • 2 apples, chopped
  • 1 orange, juice and zest of
  • 25g butter
  • 2 tablespoons of redcurrant jelly
  • 150ml port
  • 1 tbs red wine vinegar

Method

  • Roughly chop the onion and cabbage and then use the Intelligent Food Processor to slice them more finely.
  • Heat a pan on a medium heat, melt the butter, add the onion and cabbage and stir-fry for 5 minutes.
  • Add all the ingredients, cover with greaseproof paper and a lid and cook gently for 90 minutes. Red wine can be used instead of port if you prefer.
