Menopause: Pasta with Fried Sage Leaves

Alphabet T This is another simple but fresh-tasting pasta dish, taken from Healthy Eating for the Menopause which uses a healthy combination of foods. It uses an excellent herb for menopause, sage, which is known to help reduce hot flushes. You are provided with phytoestrogens from the wholemeal pasta and the pine nuts

Serves 4

Ingredients

  • 450g pasta noodles, such as tagliatelle (preferably wholemeal)
  • 2 tablespoons olive oil
  • 25g butter
  • Large handful of sage
  • 55g pine nuts
  • 55g grated parmesan cheese, plus more to serve
  • Freshly ground sea salt and black pepper

Method

  • Cook the pasta.
  • While the pasta is cooking, heat the oil and butter in a large frying pan and fry half the sage leaves on both sides until crisp.
  • Remove with tongs and drain on a layer of kitchen paper.
  • Add the pine nuts to the pan and sauté until golden. Finely chop the remaining sage and stir into the pine nuts.
  • Drain the cooked pasta well and either return to the pan or put in a large warmed serving bowl.
  • Pour over the contents of the frying pan, add the parmesan and seasoning to taste.
  • Toss with the whole sage leaves to serve, accompanied by more grated cheese.Healthy Eating for the Menopause
