Pasta with sage
Serves 4
Ingredients
- 450g pasta noodles, such as tagliatelle (preferably wholemeal)
- 2 tablespoons olive oil
- 25g butter
- Large handful of sage
- 55g pine nuts
- 55g grated parmesan cheese, plus more to serve
- Freshly ground sea salt and black pepper
Method
- Cook the pasta.
- While the pasta is cooking, heat the oil and butter in a large frying pan and fry half the sage leaves on both sides until crisp.
- Remove with tongs and drain on a layer of kitchen paper.
- Add the pine nuts to the pan and sauté until golden. Finely chop the remaining sage and stir into the pine nuts.
- Drain the cooked pasta well and either return to the pan or put in a large warmed serving bowl.
- Pour over the contents of the frying pan, add the parmesan and seasoning to taste.
- Toss with the whole sage leaves to serve, accompanied by more grated cheese.
