Ingredients

  • 500g (1lb) sweet potatoes, sliced
  • 1 teaspoon olive oil
  • 5 spring onions, sliced
  • 2 tablespoons chopped coriander
  • 4 large eggs, beaten
  • 1x 100g (3½ oz) round goats cheese with rind, cut into 4 slices
  • Pepper
  • Crisp green salad, to serve

Method

  • Place the sweet potato slices in a saucepan of boiling water and cook for 7-8 minutes until just tender. Drain.
  • Heat the oil in a medium non-stick frying pan, add the spring onion and sweet potato slices and fry for 2 minutes.
  • Stir the coriander into the beaten eggs, season with plenty of pepper and pour into the pan. Arrange the slices of goats' cheese on top and continue to cook for 3-4 minutes until almost set.
  • Place the pan under a high grill and cook for 2-3 minutes until golden and bubbling, then serve with a crisp green salad.
