Christmas leftovers frittata

This frittata recipe is an excellent way of using up vegetable leftovers from your Christmas dinner or Sunday lunch.

4-6

Ingredients

  • 500g Christmas left-overs - cold roast potatoes, peas, carrots, stuffing, parsnips, chopped, even add cranberry sauce.
  • 50g cheese cut into bitesize pieces
  • 8 large free-range eggs, beaten
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste

Method

1. Pre-heat oven to 200C/Gas mark 6.

2. Line a flan dish with greaseproof paper.

3. Arrange the Christmas left-overs and cheese evenly into the flan dish.

4. Beat the eggs, add the chopped rosemary then pour over the vegetables.

5. Season with salt and pepper and bake in the oven for 30 minutes or until the eggs are thoroughly cooked.

Serve with a healthy salad – such as the super side salad.
