Flavoured syrup for summer fruit salad

Summer fruits don’t need fancy treatment. I love them soaked in syrups flavoured with basil, lavender, star anise, ginger or lemon thyme.

Makes

250ml

Ingredients

Fit the flavouring to the fruit – basil is great with berries, lavender with stone fruits.

  • 600ml (1 pint) white wine
  • 225g (8oz) granulated syrup
  • Juice of ½ lemon
  • 2 strips lemon rind
  • A small handful of your chosen flavouring (eg basil or lavender)

Method

Bring your chosen flavouring, white wine, sugar, lemon juice and rind to the boil.

Simmer until you have around 250-300ml (9-11 fl oz) of liquid left in the pan.

Remove from the heat and allow to cool.

Strain your liquid into a jug, ready to pour over your chosen summer fruit salad.

Ideas for pairing fruit with fresh herbs

Basil

Berries such as strawberries, raspberries and blueberries

Mint

Berries such as strawberries and raspberries, and stone fruit such as peaches and plums.

Lavender

Stone fruit such as peaches, apricots and plums.

Coriander

Melons such as cantaloupe and honeydew.
