This strawberry wine cocktail is based on a recipe from the Ile de Re. It makes a lovely change from Pimm's during the summer months and is ideal for serving at summer cocktail parties or barbecues.
- 125g sliced strawberries
- 5 tbs sugar
- 5 tbs crème de cassis
- 1/2 cinnamon stick
- Handful of mint leaves
Put the sliced strawberries in a bowl, add the sugar and ‘muddle’ a little with the end of a rolling pin.
Leave the strawberries and sugar to macerate for 15 minutes.
Add the strawberry mixture to a jug with a bottle of light red wine, the crème de cassis, a halved cinnamon stick and a handful of mint leaves.
Chill the cocktail for at least 45 minutes, then serve. You can top the cocktail with some extra slices of fresh strawberries and a sprig of mint, if you like.
