Baked apples stuffed with cranberries and pecans

Try this simple and nourishing baked apple dessert recipe from Diana Henry for the perfect autumn or winter pudding.

Ingredients

  • 4 eating apples
  • 50g (20 oz) dried cranberries
  • 50g (20 oz) fresh cranberries
  • 50g (20 oz) chopped pecans
  • 125ml (fl oz) maple syrup
  • 150ml (1/4 pint) cider

Method

Preheat the oven to 180C/350F/gas 4.

Cut the lids from the tops of the apples and core them.

Mix the cranberries and chopped pecans. Add most of the maple syrup, but reserve some for drizzling later.

Stand the apples on an ovenproof dish and stuff with the cranberry and pecan mixture.

Replace the lids and pour over the cider, then drizzle with the remaining syrup.

Bake in the oven for 30-40 minutes, basting every so often.
