Method
Tip the sesame seeds into a large dry frying pan placed over a high heat. Toast for 2 minutes, until fragrant, then tip into a bowl and set aside.
Place the pan over a medium heat, add the noodles and cover with boiling water. Add a pinch of sea salt and simmer for 1 minute, stirring occasionally to break up the noodles.
Add the frozen veg and spring greens and simmer for 4 minutes, until the noodles are tender and the vegetables are cooked but still have a little bite.
Crack the eggs into a bowl with the teriyaki sauce and chilli oil, and whisk together with a fork. Drain the noodles and veg then return them to the pan and turn off the heat. Pour in the egg mixture and gently fold through the noodles, so the egg gently cooks in the residual heat of the pan.
Divide the noodles between your bowls, top with a sprinkle of sesame seeds, drizzle over a little more chilli oil, if you fancy, and serve.
Tesco's Better Baskets
Tesco Good Food Ambassador Jamie Oliver has created a selection of seasonal recipes in collaboration with WWF and Tesco as part of the supermarket's Better Baskets initiative, which aims to make it easier for customers to make healthy and sustainable choices.
“These three new recipes are packed with wonderful veg and are super flexible, so home cooks can use what they already have in the fridge or swap in whatever veg is in season," says Jamie Oliver. "They're also affordable, really quick to rustle up, and full of flavour - so will hopefully provide inspiration for the whole family.”
Tesco is also working with its partner WWF to halve the environmental impact of shopping baskets, reducing the impact of food production and tackling food and packaging waste.
