The combination of eggs, potatoes and onions creates something that is more than the sum of its parts. Inspired by the eggs my dad used to hash together for us as kids, my tortilla-making technique might be traditional but the addition of other ingredients isn’t, and it’s the way I like it because it reminds me of those family breakfasts.
Whatever you do, don’t overcook it, you want a slight wobble.
