A delicious summer mocktail made with frozen watermelon, rosewater and lime.

A fabulous summery mocktail recipe that's full of fresh flavours. Use chunks of frozen watermelon to give it that Slush Puppy texture. 

You can freeze your own watermelon quite easily by chopping it into chunks and putting it into an empty ice cream tub with enough space for it to expand (it should be loose enough that it rattles about when you shake it). Frozen watermelon doesn't thaw well if you want to eat the fruit but it does go beautifully into smoothies, such as this slush recipe.

Ingredients

  • 500g (17oz/2 cups) frozen watermelon chunks
  • 45ml (1½oz) lime juice
  • 1 tsp rosewater

Method

Place the frozen watermelon, lime juice and rosewater in a blender and blend until smooth. Pour into a tall glass.

You can garnish with a sprig of mint, if you like.
