Jersey Royals and sirloin of beef with chilli rub and balsamic salad

The sweet and fiery accompaniment of chilli-rubbed beef and balsamic salad will transform this seasonal delicacy into a tasty lunch or supper.

Ingredients

  • 1kg of trimmed sirloin of beef
  • 500g Jersey Royals

For the chilli rub:

  • 2 tbsp sugar
  • 4 cloves of garlic (finely chopped)
  • 1 tbsp dry chilli (crushed)
  • 1 tbsp salt
  • 1 tbsp Schezuan pepper
  • 100 ml olive oil

For the salad:

  • 3 handful rocket leaves
  • 50g parmesan shavings
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil

Method

Chilli rub

  • Combine all the ingredients together and rub onto the sirloin of beef in the rub
  • Marinade for 12-24 hours

Cooking

  • Preheat a griddle pan or barbeque over a moderate heat, brush off the excess marinade
  • Place the meat on the griddle pan and keep turning until it has a good colour. Seal it for eight minutes then place it in a preheated oven at 180°C, 350°F, Gas Mark 4 for 10-15 minutes depending on cooking preference
  • Wash the Jersey Royals, place them in a saucepan and cover with cold water. Add a little salt, bring them to the boil and simmer until they are just cooked (about 20 minutes)
  • Slice the beef
  • Mix all the salad ingredients together and serve with the Jersey Royals and sliced beef
