Baked spiced apple oatmeal

Prepare the night before and bake in just 35 minutes this comforting baked oatmeal will remind you of apple pie.

Ingredients

  • 80g organic oats
  • 20g mixed seeds (sunflower & pumpkin)
  • 1 apple – coarsely grated
  • ½ tsp mixed spices (eg cinnamon & all spice)
  • ½ tsp baking powder
  • 160ml semi skimmed milk – or plant milk of your choice
  • 1 tbs rice or maple syrup, or honey
  • ½ tsp vanilla essence

Method

Preheat the oven to 190C (fan 180) / Gas Mark 5.

Mix all the ingredients together and divide between two greased mini casseroles, smoothing the mixture down with the back of a spoon.

Baked uncovered for 30 – 35 minutes, until risen and golden around the edges.

Allow to stand for 5 minutes before serving.

Keeps in the fridge for 2 days and can be reheated in the microwave.
